3 tbsp mustard seeds
3 tbsp coriander seeds
2 tbsp Maple Flakes
2 tsp sea salt
½ tsp crushed peppercorns
Four 150 g salmon filets
2 tbsp olive oil
Preheat oven to 450°F.
Coarsely crush spices in a coffee grinder, pepper mill, or with a mortar and pestle.
Mix spices, Maple Flakes, and salt and pepper on a plate.
Dredge salmon in mixture and let sit for a few minutes to allow flavors to mingle.
Heat oil in a non-stick pan and sear filets 1 minute each side.
Bake in the oven for 5 to 8 minutes, keeping the center pink.
