Maple Flake-Crusted Chicken Breast

Serves 6


6 chicken breasts
½ cup olive oil
2 shallots, minced
Sprig of rosemary
1 cup Panko (Japanese bread crumbs)
½ cup Maple Flakes (medium)
1 tablespoon chopped herbs
1 tsp sea salt
Pinch of ground white pepper
3 tbsp Dijon mustard
1½ tsp clarified butter

1. Marinate chicken breasts in olive oil, shallots, and rosemary for 4 hours.

2. Combine Panko, Maple Flakes, chopped herbs, salt, and pepper.

3. In a frying pan, brown chicken breasts on both sides and let rest for 3 minutes.

4. Spread Dijon mustard over chicken breasts and top with Maple Flakes and Panko.

5. Drizzle clarified butter over chicken and bake at 350°F until chicken is cooked through.
